Un boom con el que los medios de comunicaci\u00f3n est\u00e1n tambi\u00e9n, adem\u00e1s, estrechamente relacionados.<\/p>\n<p>Sin embargo, no puede negarse que, crecientemente, amplias capas de la poblaci\u00f3n est\u00e1n cada vez m\u00e1s sensibilizadas con las cuestiones medioambientales asociadas a este discurso. La cadena alimentaria, desde la producci\u00f3n hasta el consumo y hasta el reciclaje o el compostaje y el retorno a la producci\u00f3n, afecta al medioambiente, al equilibrio social y territorial, e impacta tanto en nuestro entorno m\u00e1s local e inmediato como en el m\u00e1s global.<\/p>\n<p>Siguiendo esta tendencia y cada vez m\u00e1s, la investigaci\u00f3n en gastronom\u00eda se sit\u00faa en un marco de respeto al entorno, de inversi\u00f3n en energ\u00eda y materiales sostenibles y de preocupaci\u00f3n por todos aquellos elementos que rodean a los alimentos y que van mucho m\u00e1s all\u00e1 de la nutrici\u00f3n: de la \u00e9tica a la est\u00e9tica, del origen al reciclaje de los recursos, de la productividad y el beneficio econ\u00f3mico a la equidad de g\u00e9nero y a la conciliaci\u00f3n familiar.
